Broccoli Salad

1 head broccoli, washed, drained and chopped
5 slices bacon, cooked and crumbled
1/3 cup diced red onion
1/2 cup raisins
1 cup shredded cheddar cheese
2 tsp red wine or apple cider vinegar
1/4 cup sugar
A few tablespoon of mayonnaise, to taste
1 tablespoon sunflower kernels, optional
3-4 cups torn spinach, optional
In a large bowl, combine broccoli pieces with bacon, onion, raisins, and cheddar
cheese.  In a separate bowl, mix together sugar, vinegar and mayonnaise.  Mix into
broccoli mixture. Refirgerate. Toss with sunflower seeds and spinach before serving, if desired.
